Waiting on people answers the question you will ask most: who still has something to sign. Everyone with a document out is here, with what they were sent, how long they have had it, and when they were last reminded. The longest wait is at the top, because that is the one to chase.
For everyone.

Opened it means they have looked at the link and not signed yet. Often that is a question about the document rather than a forgotten email, and worth a call.
To remind one person, open their document. Beside each person who has not signed is a Remind button. It sends them a fresh link, and the old one stops working, so a link that was forwarded or lost is no use to anybody else. The reminder is recorded with the document.
Or remind everybody at once, from Waiting on people. Anybody reminded in the last hour is left alone, so Tom is not sent a second email, and the button says how many it will remind.
When somebody signs, they come off this list by themselves, and Finished today goes up. There is nothing to tidy away.
